McKenna in the Kitchen: The GF Banana Bread of Your Dreams

 

When Ben and I started dating, he invited me over to his house for game night with his friends. This was the first time I would be meeting them, so I had to leave a good first impression. I decided I would bring something sweet, but I knew Ben was gluten-intolerant so I wanted to bake something he would enjoy along with everyone else. This was the very beginning of my gluten-free cooking and baking journey.

I knew you couldn’t go wrong with some good, old-fashioned banana bread. And I knew, even more, you couldn’t go wrong by throwing some chocolate in it. And it was a hit! When I shared with everyone that it was gluten-free, they were shocked. Two loaves were gone within minutes!

Now, as Ben and I’s wedding quickly approaches, I have learned to love baking and cooking gluten-free. It has benefitted both of us, and it has been so fun to learn what works!

This recipe is even more special than the bread I made to impress his friends, with the added bonus of our very own Tumble coffee.

Ingredients

1 1/3 cups Gluten Free flour (I prefer Bob’s Red Mill 1:1 brand)

1 tsp baking soda

½ tsp salt

½ cup dark brown sugar

½ cup granulated sugar

1 tbsp Revive’s very own Tumble ground to espresso (1 ½ tbsp if you want the coffee flavor to really come through)!

½ cup melted unsalted butter… You can use your favorite vegan option here if preferred

1 ½ cups mashed banana (about 3 medium bananas)

2 large eggs

1 tsp vanilla

½ cup low-fat, plain Greek yogurt… Or, use a nut-based yogurt!

¾ cup dark chocolate, chopped (save the shavings!)


Instructions


1.     Preheat oven to 325 degrees F and grease and line a 9x5 loaf pan with parchment paper

2.     In a small bowl, whisk together flour, baking soda, and salt. Set aside.

3.     In a separate large bowl, mix together the sugars, espresso, and melted butter until you have a paste-like consistency. Whisk a bunch and fast! This should take at least one minute—or, use an electric mixer if you’ve already got your arm workout in for the day!

4.     Add in your mashed bananas, then the eggs, yogurt, and vanilla

5.     Now that your wet ingredients are combined, fold in the dry ingredients you set aside earlier, then finally, fold in your dark chocolate chunks

6.     Pour the batter into your prepared loaf pan and spread it eve

7.     Sprinkle those extra dark chocolate shavings on top!

8.     Bake for 1 hour – 1 hour and 15 minutes—just until a toothpick comes out with only moist crumbs

9.     Let it cool completely before removing it from the pan

10.  Dig in!

This is best enjoyed when paired with a delicious cup of coffee and the ones you love
